Female: This view is breathtaking. Chef Brian: I took this due to the view and the nice ambience but you know what what I’m going to show you today, I’m going to cook a nice real Caribbean Jamaican menu. Would you like to join me so I can show you to do for your friends and family? Female: I think that sounds great. Chef Brian: Let’s go. Female: You’re the head chef here at the White Witch? Chef Brian: Yes, but you know what, like I mentioned earlier, in Caribbean, especially in Jamaica, we have a beautiful fresh fish. Look at that. Lobster, fresh. Look at the fresh lobster, here in White Witch, we cater to the elite, the best—they know what they want, very particular people so I, not to cross the line to upset them but they taste this flavor and say wow, what is this but they understand seafood is healthy. They come and say I want some healthy food. I don’t like—I eat steak everyday. I’m in Texas. I’m a neo but I want something healthy. Female: Especially when you can make healthy delicious at the same time, there’s no reason not to. Chef Brian: Have a little hint of spice, a hint of aroma. Female: So then food to them is familiar but you might add a little bit of a secret to it. What dish are we making today? Chef Brian: It’s a bola base. This is fish cooked in a broth with wine and vegetables and saffron, everything. All from Jamaica, with the beautiful shrimp, calamari, clams, snapper and scallops. [preparing and cooking] Chef Brian: This-- Female: Too much, that’s good? Look how colorful this fish is. You’re making me feel like I actually could cook something. Chef Brian: Nice. Female: Very nice, so it’s a little bit like you said, a little bit of Asian right here. Chef Brian: You see the sauce in there. Female: It looks so rich. It smells amazing. Chef Brian: So this is the spice and all this, we cut up in nice pieces. Then we grill them, we put them in a plate and the sauce over it. Wine here. Female: Look at that. Chef Brian: It’s very nice actually. Female: Thank you. Chef Brian. Chef Brian: How are you? Female: Very good. My goodness, beautiful. So good. That looks great. So the White Witch restaurant overlooks actually the White Witch golf course which is absolutely gorgeous. But I understand there’s an interesting history to the name of the place. Chef Brian.
