White Chocolate Mousse Pie From the Family Circle Kitchen to your kitchen on Parent’s TV Julia: Hi everybody I’m Julia Claire and today on Parents.TV we’re going to show you how to make a fabulous dessert. White chocolate mousse pie doesn’t that sound good. It was featured recently on the cover of Family Circle Magazine and we’ve been invited into the Family Circle test kitchen with Senior Food Editor Julian Miltenburger, how are you? Julian: I’m doing well thanks. Julia: Thanks for coming by. Thanks for having us she’s going to show us how to do it. So you’ve already made the crust taking care of that step tell us how you did it. Julian: Well we start with about 13 sandwich cookies otherwise know as oreo so we make to crush them either the food processor or in a bag and mix them with 3 tablespoons of melted butter and just press them on to the bottom of a 9 inch pie plate and then we took 17 Milano Cookies and these are nice because they are the alternate side chocolate and vanilla. Julia: Would anyone notice? Julian: Yes I think you would notice that there was 16. Julia: Okay we’ll put that back, okay. Julian: Okay so what I did is I just popped it in the fridge for a little bit while I was getting this ready. Julia: Okay and you’ve got the finishing touches, the whip cream, the strawberries and the chocolate cookie crumbs but we need to start with the filling. Julian: Getting out of ourselves. Julia: We’re getting out of ourselves. We’re going to head to the shelves come on. Alright Julian we’re ready for the filling the cooking part what have you already added in here, this is the chocolate. Julian: So what we have in here is 12 ounces of white chocolate that are just chopped up with about 4 ounces of cream cheese. Julia: Okay cream cheese at the bottom there. Julian: And then we’ve got some heavy cream, it’s a quarter cup of heavy cream and this got a teaspoon and ¼ of gelatin that we’ve soaked for a little bit now we’re just going to add it in. Okay and we’re going to heat it on medium low heat for about 6 minutes. Julia: You know what Julie I think we could eat this without cleaning up the pie filling. Julian: Just a spoon. Julia: It looks just like a pudding. Julian: It’s about 5 or 6 minutes just continually stirring. Julia: How’s it going? It’s silk and smooth. Julian: I think we are there so I’m just going to turn off the heat and add in a teaspoon of vanilla. Julia: Alright. Julian: Just stir that in and then we’re ready for our water bath. Julia: Alright so we need to chill the filling quickly. Julian: Definitely and so what were going to do here is we’ve got what’s called either an ice bath or water bath. You just got ice cubes and water in a bowl and I’m going to transfer through this into a large bowl stir it continuously while it just sits in there and gets cold real quick. Julia: Alright what can I do while you’re chilling the filling? Julian: I would love you to beat the heavy cream. We call for ½ cup of heavy cream and we got to 2 cups. Julia: Okay. Julian: So that looks pretty good I think you’re just about at medium to stiff peaks so why don’t you go ahead and pull out those beaters. Julia: Do you think I should taste it just to make sure it’s okay. Julian: Yes you can I mean there’s not any sugar in it so it might be a little. Julia: Okay who needs sugar? Julian: Exactly. Julia: It’s heavy cream. Julian: We’re just going to lick this out of the ice bath and to the side and we are gently going to fold in about 1/3 of those that heavy cream that we’ve beaten up. Julia: Alright. Julian: So lets just put a little bit in there and folding you want to cut it in half kind of with the spatula and then fold the other mixture on top of it. Julia: So why do you need to fold it like that rather than just you know mixing it around? Julian: Because then we you know ruin all of that time you just spent with adding air to the cream to make it all light and airy so we just continue until we don’t see anymore white streaks. I’m going to hold the bowl if you don’t mind just putting it down into the crust. Julia: Keep the weight in the center so we don’t ruin all these beautiful cookies. Julian: So then just smooth out that top a little bit and we pop it directly into the fridge. Julia: Perfect. Sweet. Julian: Okay I think we’re there Julie Julia: Is it done. Julian: I think we’re all set. Julia: Alright Julian: So let me bring it over we’re going to start topping them in. Julia: Okay let’s top away. Julian: So you can go ahead and spoon that whip topping on there and then we’re just going to sprinkle it with strawberries and some of the crushed sandwich cookies. Julia: You show me how to do that. Julian: So you want to spread it out, neat trick if you don’t have a spatula use the back of the spoon those really professional looking swirls and just top it with berries however you want. We could also add you know different flavor berries if you want it blue berries or black berries even with raspberries are nice with this. Julia: I think oh and then what? Julian: And then we just do a little bit of the cookie crumbs where I added piazzas very contrast. Julia: This looks good, okay let’s taste this. Julian: Firm slice almost like a cheesecake. Than you madame. Julia: Alright let’s try you first. Julian: Okay. Julia: Mmm! Julian: Can’t go wrong. Julia: OH my goodness that is delicious. Julian: White chocolate moose pie right.
