It's Valentines Day cocktail time. You know Valentines Day drink needs to be deluxe, celebratory and tailor to the taste of your loved one. I'm going to show you three very different cocktails that I think you do the job perfectly. Let's start with the very simple champagne cocktail. This one I call the Fleur de Champagne and it starts with elder flower liqueur which is a French aperitif made from elder flowers and has wonderful notes of apricots. Start with an ounce of that in the bottom of the champagne flute, top it off with about four ounces of chilled champagne to go together really nicely and garnish with a fabulous half strawberry. Next something a little bit more decadent and rich. For someone who’s got a sweet tooth, the chocolate covered raspberry, you take a cocktail shaker filled with ice. Put in an ounce of chocolate liquor, an ounce of raspberry liquor, an ounce of good quality Bourbon and then just a half ounce of heavy cream which gives you some richness. Shake until your hand hurts. Strain into a cocktail glass and garnish with a nice plump raspberry, delicious. And now drink that’s light and crisp and refreshing, I'm calling it a Pink Fins. This uses crème de cassis which is liquor made from black currants about a half an ounce of that, half an ounce of orange liquor, an ounce of vodka and just a splash of lemon juice to cut the sweetness, top this off with club soda, give it a little stir and garnish with the lemon slice, delicious.
