The Difference Between Condensed and Evaporated Milk Everyone knows the different between evaporated and condensed milk. They both start with regular milk. They evaporate off 60% of the water to give you evaporated milk. They’ve been add sugar to give you the condense milk in fact, 40 to 45% of your condense milk can be sugar. So, you can't substitute one for the other, but now you know why they're difference.
