How to Tell if a Brie Cheese Has Gone Bad Nate: My name is Nate from Massacusettes. I’d like to know how can I tell if a soft cheese like brie has gone bad? Matthew Zappoli: Nate, when you are looking cheeses like brie, in order to tell if they’re still good, if they’re going bad, you want to look at the color of the cheese as well as the rind. You want this to be nice, clear white and you want this to look nice and clean like this. If it starts to get like a gray color to it or the rind here starts to get all wet and gray as well, that’s when you know that it’s a little beyond its best point.
