They keep them on ice so they’re ready to be poured served and garnished. One of the biggest time savers is preparing your garnishes ahead of time. You can cut twist, wheels and wedges. And store them in sealed bags and keep them in the fridge snip the ends of your mint and keep it from wilting by storing it in cold water. also you can pre-spin in your olive’s and your cherries but remember keep them covered in liquid so they don’t dry out a good garnish means every drinks look like it is made by a pro.
