Emily: Hi! I’m Emily from Easton. And one question I’ve always been wondering especially around the holidays is: what is the difference between a sweet potato and a yam? Ron Silver: Emily, that’s a great question. The difference between yams and sweet potatoes is that sweet potatoes are grown in the United States and yams are grown in Africa almost solely. A yam is a long root. And it can get up to six feet long. And the sweet potatoes in the United States are often referred to as yams. If you’re using a recipe that calls for yams or sweet potatoes, the two are interchangeable. It’s a question of personal preference and taste, which ones you have available or which ones to use. Some may be sweeter or starchier.
