Audra Lowe: Are you still being faithful to your New Year’s resolutions to eat better? Well, if you feel that your will power is waning, here is some inspiration for you. A delicious nutritious winner salad that’s going to have you looking forward to actually eating healthy. Salads don’t have to be boring. And if they’re done right, they can taste great and be good for you too. Laura Pensiero: Our Salads are very conscious of mixing ingredients to add color, eye appeal, health, nutrition, texture. Audra Lowe: We met up with Laura Pensiero, Chef Nutritionist for Just Salad, a salad bar shop with locations in Manhattan and Hong Kong and we asked her to build us a better salad. Laura Pensiero: We’re going to go with a real wintery salad. There are ingredients that are available in cold weather that are just really hearty, sustaining and colorful. There’s an array in front of us here, and you can just see just by the color that they’re nutrient rich. So we have beets, broccoli, butternut squash, pumpkin seeds, cheddar cheese which is reduced fat but it’s also optional. The dressing is a horse radish dressing which is made with low-fat sour cream. This is where we get our creaminess from, it’s from the sour cream. If you don’t like sour cream, you could always do low-fat mayonnaise in place. Give it a little spice up with some horse radish. This really gives it a little kick and also works well with all these sort of winter ingredients. This is horse radish cream, if you don’t want to use this, you can always grate with a zoster which I have here, some fresh horse radish into the dressing. Chives, it’s horse radish chive with a little bit of salt. I’d rather season the dressing than season the salad with salt. Just give it a blend. We’re using baby spinach which is available at good quality throughout the winter. If you want a little more crunch to the salad, you could always add some iceberg. We have some beautiful red beets here. You can roast them at home or you can just buy like a cantered jarred beet and slice them like this. Some broccoli also available throughout the winter, the butternut squash, some apples which store well throughout the winter season, optional cheddar cheese. And then, I love pumpkin seeds. They have a little crunch, a little something and they also have a lot of compounds in them that are very potent antioxidants. This is our horse radish vinaigrette. It’s nice to have something tangy to bring out the flavor of the cheddar cheese, the broccoli and the beets. And when we mix these altogether, this is almost like a no-fat dressing. I can smell the horse radish coming right off the salad. It’s really amazing. If you can see by all the colors and all the flavors, we’ve got an enormously healthful delicious winter salad here.
