Thanks for stopping, I’m Chef Billy Parisi. You’re watching Fix My Recipe on WSOCTV.com. Our new meal solution recipe brought to you by Loews Food is a Grilled African Season Cod with the side of Steamed Baby Carrots. The first thing we need to do is make our African seasoning, so in a pan, we’re going to add in this canola oil, cumin, coriander, cinnamon, garlic and don’t forget salt and pepper. Make sure you mix those seasonings very well. Next, we’re going to dredge this cod right in that oil seasoning mixture. We’re going to place it right on a huge sheet of thin foil. Next, we’re going to slice up some yellow onion and make sure we’re get some nice onion rings. We’re simply going to place it right on top of that fish. We’re going to make it tint, go outside of that grill and we’re cooking it at 400 degrees for about eight to 10 minutes. It does not get any easier to cook than this. We’re going to go ahead and leave our thin foil closed and next we’re going to steam our baby carrots. So, go ahead and peel these baby carrots. Throw them in a pan of boiling water pop a lid on. We’re going to simmer it for about six to eight minutes and I’m going to plate this food up and you know I’m going to try some. Wow! Cod never looked so great.
