Ted Allen: So its New Years Eve. You're setting up for the biggest party of the year and you say to yourself you know, I want to serve a drink that somehow different, something that’s both celebratory and unique. Well, we're going to go that one better and show you a drink that’s actually good for you. It’s a champagne cocktail that contains an infusion of ginger which has been used to treat stomach upset for thousands of years. Maybe this one will leave you feeling a little better tomorrow. To help us out with this, bartender extraordinaire, Gene. Gene: Hi Ted. Ted Allen: How are you sir? Gene: Good. Generally I'm hanging up this hangovers like parking tickets but today I'm here to help you make something special. Ted Allen: Excellent! Let's get started. You're going to need a half cup of water, a half cup of sugar, half a cup of sliced fresh ginger, half a cup of vodka, three tablespoon s of candied ginger cut into little cubes and one bottle of chilled sparkling wine. Start by simmering the water, sugar and sliced ginger in a small sauce pan uncovered for ten minutes. You're basically making a ginger infused simple syrup. When you're done simmering, remove the syrup from the heat and let it cool. Then stir in the vodka and refrigerate until cold. Once the syrup has chilled strain the ginger out and throws it away. Now to add some style, rub the rim of your champagne flutes with the lemon wedge and dip them into some sugar, then put a little candied ginger into the glass. Finally, pour about a tablespoon of the syrup into the glass and top it off with sparkling wine. Gene: And here you go Ted. Ted Allen: Here’s to your health. Happy New Year!
