Baking Soda Vs. Baking Powder Ever wonder what difference between baking soda and baking powder is? They’re both leavening agents. Baking soda is sodium bicarbonate. When mix with an acid like lemon or buttermilk, it creates carbon dioxide bubbles which causes your baking to rise. Baking powder on the other hand is sodium bicarbonate with the bit of dry acid already mixed into it so something like cream of tartar. It just needs a little bit of liquid to have that same reaction and it is typically used in recipes where no other acid is available. Find you're run out of baking powder? No need to worry. So for every teaspoon of baking powder you need for you recipe, here’s what you need to mix. You’ll start with a ¼ teaspoon of baking soda. Add a ½ teaspoon of your cream of tartar and then a ¼ teaspoon of some corn starch. And there you have it a substitute for baking powder.
