4th of July Hamburger Recipes Rhiannon Ally: Nothing beats grilling on the holiday weekend but we don’t want those normal humdrum burgers. Former top chef masters contestant Executive Chef Michael Schlow shows us how to build burgers with style. Michael Schlow: I’m here at Alta Strada at the MGM Grand at Foxwoods this is my restaurant and I’m outside here on the party and I’m going to be grilling some great things for the 4rth of July, primarily, hamburgers. First one we’re going to do is the Radius burger. It’s affectionally known as the Schlow burger and it’s a thick juicy hamburger. It’s not a dainty small hamburger, whatever good appetite when you’re going on for this one and this is something I’ve been serving at Radius for a little bit of time now and the trick to the hamburger is to start off on really high heat. It’s 80/20 grind that’s a little bit of Extra Virgin Olive oil that’s put in to every single burger. So a small cup of little bit because of that olive oil and then we’re going to moving on to slightly lower heat and let it cook very, very slow. Trick to this hamburger, really good cheddar cheese, crispy onions and horse radish sauce. This one will not fail you. So after few minutes over high heat though, I want to cook it the whole way on super hot temperature. The proteins sort of seizes up, it gets a little firm, a little hard because what we going to do is I want it over to lower part of the grill. It’s a little bit cooler, and this is going to allow them to cook a little bit more slowly. It’s going to take about eight minutes and then we’re going to put some really good cheddar cheese on top and then we’re going to finish off the burgers. So the trick here now that the burger is done, it’s about eight minutes or so on the grill. This will not go right from the grill into your mouth because then all the juices are going to come leaking and a burger has to rest just like a good steak. And so the trick here is to allow this burger to rest for a few moment s before serving it to your guest. Don’t let it hang out in the corner of the grill, it’s just going to get hard and dried out and I think some of you, have even serve done or two of these before. I, on the other hand, I’m going to wait for just a few moments, I’m going to dress this with some delicious horse radish black pepper sauce which is just really easy to make. The mayonnaise, lemon juice horseradish and black pepper and then we’re going to top this with some crispy onions. Put a little bit on the top of the bun. Whether you grill your bun that’s up to you, personal preference? Crispy onions build this nice and high and this one will impress your guest for sure. You want a nice serving platter and these are ready to go in about two minutes so that allow that burger to rest just a few moments. All right so we got our big fat juicy Schlow burger that’s ready to go but we need a counter part because the battle rages on. Thick burger or thin burger. For me I like them both but I’ve got a great new dish that I’ve been serving at Alta Strada and also Via Matta it’s called the Guilty Pleasure, it’s a thin burger, times in traditionally eat hamburger so we have to be something stylized, something thin and something sweet. It’s got pancetta, provolone, onions and then what we do is we make a little sandwich out of that with some crunchy Italian bread for right on the grill. And what’s great about this is you can have this pre made before you guest ever get there and then you just throw them on the grill, flip them over, reheat everything and it’s delicious. Okay so now we both decide to the burger are grilled and crispy and delicious, we’re going to put this on a wooden board and a word of advice, what kind of hamburger is you’re going to make, just keep it simple. Your family will appreciate it and your friends will love you for it. Nice simple ingredients just good quality ones, I have some great French fries here and one of the things I do like finish this of with make it — this is called the Guilty pleasure because I finish it off with a chocolate, banana and the Talla milkshake just a little one.
